Sounds crazy but I have most light bulb moments when I’m the busiest…. Had to bake for my daughter’s class party and this recipe came up ….. A deliciously moist and dense cake that would please everyone and I cannot help but gotta share this !!!
Matcha Bundt Cake Recipe
- 300 grams of plain flour
- 300 grams of unsalted butter
- 6 eggs
- 300 grams of dark brown sugar
- 6 tablespoons of greek yogurt or sour cream
- And lastly matcha powder
- 2 tablespoons of vanilla essence.
Step 1: Beat butter with dark brown sugar till light and fluffy.
Step 2: Add the eggs one at a time at this stage till it’s all mixed in well.
Step 3: Flour and yogurt goes in at the next stage with the vanilla essence and lastly the matcha powder.
Believe it or not, I didn’t have any matcha powder so I just put some green tea in my vitamix and after pulsing it for couple of minutes, got this great matcha powder!!! Love my blender ….. I wanted a strong green tea flavour so added around 4 big tablespoons to the mix. I wanted intense green so that worked for me. You could decrease it by 1 or tablespoons if you want a lighter colour. With more matcha powder, the cake could turn out slightly bitter as well.
Step 4: What’s important next is grease your bundt well. What I mean is get that grease into every bit of the bundt and with 2 tablespoons of flour, dust the bundt after you’ve greased it. This ensures the bundt lifting off when you need it to after baking.
Step 5: Pour the batter into the bundt tin and bake at 170 degrees celcius for 40-50 mins.
Enjoy it alone or with Vanilla ice cream…..seriously good!!!
