I’ve wanted to do this for a while and over the weekend decided it’s time. It’s amazing how creamy and easy it is to blend cashews… no straining is involved….just blend and chill. It’s such a treat and here’s how…..

Recipe

  • 2 cups of cashews soaked in the fridge for at least 3 hours
  • 3-4 cups of filtered or cooled boiled water depending on how creamy you’re after

Method

  1. Discard all the liquid after soaking, place cashews in a blender with 3 cups of water.
  2. Blend at high for a couple of minutes and taste. This is pretty much to see if it’s too creamy for you. If it’s too thick for your liking, just add half a cup of water at a time and blend again.

Variations

Spiced chai: 3 teaspoons of cinnamon, 3 teaspoons of ground cardamon and honey to taste

Chocolate: 3 Tablespoons of cocoa powder

Strawberry: 2 cups of strawberries
