This is such an easy recipe and so yummy too.  I used almonds but pecans works equally beautifully. My kids love this in their lunch boxes and you could modify it with adding seeds as well just to toss things up.

Cinnamon Almonds.

8 cups of raw almonds, 2 free range egg whites, 1/2 cup dark brown sugar, 1/2 cup maple syrup, 2 tablespoons of ground cinnamon.

I set my oven at 125 degrees celsius and roast my almonds for around 30 mins.  Beat the egg whites together to get them foamy and then add the brown sugar.  I just added the baked almonds to the egg whites and coated them.  Right after, add the brown sugar, maple syrup and cinnamon powder and mix them well in. Bake the almonds for an hour and a half in 125 degrees celsius. I separate and mix the almonds every 15 mins just to unstick the almonds.  It is a great reward and your family will love you for it.
