These little gems are so fun to make. They’re like mini hand-held pies! You can personalize them however you want, just vary the jam filling. I usually use raspberry or strawberry jam.
2/3 cup butter (I use unsalted)
1/2 cup sugar
1 tsp vanilla
1/2 tsp orange zest
2 cups flour
1 tsp baking powder
Jam for filling
Sugar for sprinkling
Cream the butter and sugar until they get nice and fluffy. Add the egg, vanilla and orange zest and mix well. Dump in the flour and baking powder and stir until combined. Refrigerate for a few hours untill the dough is firm. Preheat the oven to 350 degrees. Divide the dough into 2 parts. Roll out the first part to 1/4 inch and cut out squares or circles. (I usually do circles) Place on a baking sheet. Put a teaspoon of jam on each dough cut-out. Roll out the second part of dough the same way as the first and cut out more shapes. Place the tops on the jam and press with a fork dipped in flour to seal. Sprinkle with sugar if you want. Bake for 10 minutes or until golden brown. Enjoy!
