A cute little no-bake lemon flavoured cheesecake with a coconut, white chocolate, biscuit base & a wobbly jelly top. A hit with kids!

 

1 x 85 gram packet jelly (jello) crystals, any flavour

125 grams butter

1 x 250 gram packet of plain biscuits

1/2 cup desiccated coconut (50 grams)

125 grams cream cheese (room temperature)

200 grams condensed milk

1 medium-sized lemon (you will need 1/4 cup juice from it and also the zest)

1 1/2 teaspoons gelatine

Optional – 50 grams (approx 1/3 cup, when chopped) white chocolate
