It’s Friday and we’re having spaghetti and meatballs for dinner. That calls for a celebration. For these are my most favourite meatballs on earth. I got the recipe from A Cup of Jo. Her blog is amazing. Love love love the recipes and photography.
Her recipe calls for veal but we’re not big veal eaters so I skip this and make it purely with beef and pork mince.
These along with my tomato veggie sauce are not your quick weeknight dinner (I do a different sauce to the one in the blog). They need a few hours to pull together. However, you can freeze these little babies along with the sauce ready for a quick weeknight dinner at the ready. Which is great, because this recipe makes up to 60 meatballs or so.
