The saying, “A balanced diet is a cookie in each hand”, holds more truth when those said hands are holding these cookies! Let’s face it, what can really go wrong with Oreo and coffee? I have personally made many friends with these delectable cookies;  a favourite (me and the cookie) at the workplace and parties! These scrumptious cookies are packed full with flavours, a little crisp on the edges and oh so gooey on the inside! Happy baking everyone!

Ingredients (Makes 15 cookies)

  • 1/2 cup butter
  • 1 cup brown sugar
  • 2 tsp vanilla
  • 1 egg
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup crushed Oreo cookies
  • 1 Tbsp instant coffee powder
  • 1/2 cup chocolate chips

Method

  1. Preheat oven to 350F
  2. Cream butter and sugar until smooth, add in vanilla and egg, mix until blended
  3. Mix in all of the dry ingredients. Stir until well combined
  4. Using a 5 cm (diameter) ice cream scoop, scoop cookie dough onto lined baking trays
  5. Bake in preheated oven for 10 mins
