If there was one thing the Scottish did to add to the wonders of this world, aside from men in kilts (of course) 😉 it would be the creation of this delectable cookie 🙂 This cranberry shortbread is anything but short …………… of amazing! Hands down the all time favourite cookie in our home! You could use any dried fruit you desire, add a nut of your choice, or leave it plain. No matter your decision, it’s simply amazing, or have I already said that? So, let’s break out those cookie cutters and get to work 🙂


  • 1 cup butter
  • 1/2 cup sugar
  • 1/2 tsp vanilla
  • 2 cups flour
  • 1/2 cup rice flour


  1. Preheat oven to 350 F 
  2. Cream butter and sugar till light, add vanilla
  3. Add both flour. Mix well
  4. Knead dough for 5 minutes
  5. Roll dough out to desired thickness and cut into desired shapes
  6. Bake for 15 minutes
  7. Lower oven to 300F and bake cookies for a further 12 mins or until lightly brown
