This is the easiest thing to make. I don’t know why I waited so long to try this recipe which a friend gave me a while back. It should be called “no-fail-granola”. You can give the sugar-laden, store bought stuff the boot after you try this. I substituted the rolled spelt with more oats and rice puffs. Instead of wheat flakes I used wheatgerm. Whatever works for you and your pantry.

  • 3 1/2 cup rolled oats
  • 1 cup rolled spelt
  • 2 cup rice puffs
  • 1 cup wheat flakes
  • 3/4 cup mixture of pumpkin seeds, sunflower seeds and sesame seeds
  • 3/4 cup chopped raw nuts
  • 1/2 cup shaved or dessicated coconut
  • 1/2 cup brown rice syrup or malt syrup
  • 1/2 cup light vege oil (I use grapeseed oil)
  • 1 cup dried fruit (sultanas, chopped dried apricots, cranberries, mangoes etc)

Dried ingredients mixed with brown rice syrup

  1. Mix all dry ingredients together, except the dried fruit.
  2. Melt together oil and brown rice syrup.
  3. Stir rice syrup mixture through dry ingredients.
  4. Spread over two baking dishes. Cook at 180°C, for about 20-30 min, stirring a few times to ensure it cooks evenly.
  5. Remove from oven and cool. Stir through chopped dried fruit.
  6. Recommend using those deep dish oven trays rather than the thin cookie trays – you’ll save yourself a lot of fly-away granola when mixing.
