Weekends are made for lazy breakfasts. Coffee. Bread. Pastries. Sunny side up eggs. We are really lucky that we live in a neighbourhood with a few great bakeries within walking distance. The newest bakery on the block is an interesting little fusion of east and west. European style bread with Japanese techniques. Head Baker Kevin Chang churns out his bakes under the guidance of Master Baker Katsuei Shiga a veteran baker from Significant Signie in Japan. Their bread is amazing. Light, fluffy and moist, with really unique flavours.
One of my favourites is their sourdough English muffins. Best thing since sliced bread. Almost as satisfying as making your own, but with so much more flavour, and a light, delicate crumb. Not rock hard at all like the ones you find in the supermarkets here.
I always bring some home.
The croissants are pretty special too – 27 layers of pastry. Not too buttery (although I don’t mind them more buttery), but light and fluffy – Japanese style.
The bakery doesn’t believe in using artificial food flavouring, colours, preservatives, additives or chemical improvers. And I actually think the flavour of their products are better. They have an interesting range of breads from sourdough, ciabatta, milk breads and baguettes.
Weekends are pretty busy as they serve BREAKFAST ALL DAY.
This place is definitely one of my new favourite local bakeries. If you’re in the neighbourhood, it’s worth a visit!
