It’s been a while since I posted! Not because I got lazy or anything don’t worry! I was simply away on my holidays and I couldn’t post:) I’m happy to announce that I am in the process of making a website for my baking! So summer is in full swing! I was trying to think of a fruit that reminds of summer and strawberries came to mind! I love a good strawberry and banana smoothie, they’re light, refreshing (and also make you feel healthy!!) On the other hand a strawberry milkshake is sweet, rich and decadent! 

I decided to bake cute little strawberry shortcake cupcakes using a ‘Nesquick Strawberry Milkshake’ mix I purchased! 


So for the bottom of the cupcake you’ll need: 

14 digestive biscuits crushed 

4 tbsp of butter


For the bottom of the cupcake

1) You must first make the bottom layer of these cupcakes, which is the biscuit base:) First you must crush the biscuits using either a food processor or putting them in a sealed ziplock bag and using a rolling pin to crush them!

2) after they have been crushed you want to go ahead and melt your butter in the microwave

3) once done you can pour it over the crushed biscuits until they form a wet sand like texture

4) You then must add about a tablespoon of this into each cupcake case and flatten it down:) It’s almost like making the bast of a cheesecake!

For the cupcakes you’ll need:

1 cup of flour

1tsp of baking powder

a pinch of salt

1/2  stick of butter

1/2 cup of sugar

1tsp vanilla extract

2 large egg whites

1/4 cup of milk

5tbsp strawberry milkshake powder (I used Nesquik)

A few drops of red food colouring to make a strawberry colour


For the white cupcake batter

 1) In a bowl of a stand mixer, add the butter and sugar. Beat until they are soft and fluffy, this takes about 2-3 minutes

2) After the butter and sugar has been beaten you must then slowly add the egg whites (as you want it to be a white cake!) and the vanilla extract! Beat until all is combined (about 1 minute) make sure to scrape down the bowl. At this point I added my strawberry nesquik powder mixed with a tiny dash of milk

3) In a large bowl take your dry ingredients- flour, baking powder and salt. Whisk these together until combined

4) Now you want to alternate the dry and wet ingredients, starting with the wet, add about half of the milk into the mixture and about a third of the flour. Keep alternating until you have no more wet and dry ingredients left:) But remember, always try and finish with dry! So i like to do Wet,Dry,Wet,Dry

5) Add your food colouring, it’s really up to you how much you want and what colour you’re looking for!:)

For the Icing you’ll need:

300g icing sugar

150g butter/margarine

1tsp vanilla extract

1tsp milk (optional)

Icing method:

1) Put the butter/ margarine into the stand mixer bowl and beat for about 4 minutes until its light and fluffy and white in colour

2) On a low speed slowly add the flour into the butter, once all is added turn up the speed to high and beat for 2 minutes

3) For flavour add vanilla extract to the buttercream on a low speed and beat for 30seconds:)

For Decoration you’ll need:

Spare crushed digestive biscuits 

1 tbsp milk

3 tbsp Strawberry milkshake mix
