Hi baking friends!! I decided to bake a tray bake for the first time and it turned out to be great:) They are super easy to make and you can do a wide range of flavours! I made this recipe up myself and it was my first try at it! If you want the mixture to taste a little bit more like caramel then I would suggest maybe adding some actual caramel into the mixture!


2 and 1/2 cups flour

1 and 1/2 tsp baking powder

1/4 baking soda

1 and 1/2 tsp salt

1/2 cup of butter

1/2 cup caster sugar

1/2 cup light brown sugar

3 eggs

1/2 cup butter milk

2tsp vanilla extract

100g dark chocolate chips

oven: 180 degrees for 20-30 mins


**1) Make sure all your ingredients are at room temperature**

2) First, beat the butter, caster sugar and brown sugar in a mixing bowl until they are light and fluffy (this will take about 2-3 minutes)

3) In a separate bowl whisk your dry ingredients, the flour, baking soda and baking powder and salt. Whisk until smooth and combined 

4) Then, you want to crack your eggs into the utter and sugar mixture and slowly add your vanilla extract:) Once done this beat for about 1 minute on a low speed

5) Slowly add your dry ingredients to the mixture, I would go about a half at a time (so there is no white snow all over your kitchen with the flour explosion;) ) 

6) After all the ingredients are well beaten you then fold in your chocolate chips 

7) Pour the mixture into a well greased tin and put in the oven for 20-30 minutes:)

White Chocolate Ganache:

150g white chocolate chips

200ml double cream


1) Place the chopped white chocolate into a microwave safe bowl and set aside 

2) Heat the cream in a small saucepan until it is  just boiling.

3)Pour the cream over the chocolate and make sure to leave to stand for two minutes

4) After this, stir the ganache until it’s smooth.
