This weekend I was desperate to bake as I haven’t baked in a while, so I decided to bake two of my faves ingredients – CHOCOLATE & MINT = Chocolate Cupcake with Mint Frosting! What can I say… these I’ve been told are DELICIOUS!!

It is not difficult to bake this yummy cupcake.. Cocoa powder, butter, eggs & flour! And for the frosting, butter, icing sugar with peppermint extract and mini chocolate chips (though this is optional). I didn’t have the extract so I used peppermint essence and for the color – Green Food Coloring!

Of course, I wanted to be slightly more creative, I decided to add mint hearts and a mint flavoured white chocolate spoon as decoration.
