I was craving a simple shortbread and came across this recipe from Feasting On Fruit. They also just happen to be vegan and paleo, so perfect for me! I’ve been hooked on tiger nut flour since I first started using it, and I love finding new ways to use the flour.
These cookies are probably the easiest thing I’ve ever made. The recipe is incredibly incredibly simple and pretty foolproof. They only call for five ingredients:
- tigernut flour
- maple syrup
- coconut butter
Pretty amazing! I love super simple recipes because when a craving hits, the faster the cookies come out of the oven, the better. Unfortunately I’m out of coconut butter, so I used a mix of coconut oil and earth balance for these. I wish I did have coconut butter though because it looks like the texture of mine would have been better with it, not to mention have even cleaner ingredients.
Her cookies look a bit more refined than mine because she suggested using a cookie cutter to cut perfect circles, but I opted to just flatten mine.
Super simple and they smelled great!
I let them cool while I decided what I’d dip them in. She suggests a chocolate dip which would have been great but as usual I’m missing ingredients and didn’t have any chocolate or cocoa powder.
I ended up going for maple butter, but I added a few small drops of peppermint extract for a minty glaze.
It was delish! The glaze set up perfectly and added a not-necessary-but-really-appreciated cherry on top of an otherwise very healthy cookie.
