I recently discovered a new vegan and gluten free food blogger in the Facebook Group Gluten-Free Vegans – Bunny’s Bite chooses a different ingredient every week and develops recipes with it. She has an amazing Instagram feed (@bunnysbite) and Facebook page that is filled with such amazing looking food it has me drooling all over the place. So much so that I had to try some of her recipes stat! Nothing is as exciting as food you know you can enjoy without worrying about trying to adapt it. 

I messaged her and asked her about which ones are the simplest and easiest to make. One of her suggestions was her Chocolate Chip Cookies so I set forth and threw together a batch. 

The ingredients she uses are:

  • Coconut oil, room temperature
  • Coconut sugar
  • Almond milk, unsweetened
  • Vanilla extract
  • Gluten free all purpose flour
  • Almond flour
  • Baking soda
  • Baking powder
  • Salt
  • Dark chocolate chips

All of which I use regularly and had on hand, except on this day no chocolate chips and since getting chocolate chips here, let alone vegan ones is no easy task I decided instead to use the vegan marshmallows I had on hand and made marshmallow cookies! I baked them for the time she recommended (I believe 8 or 9 minutes) and they turned out perfectly..

Bunny’s Bite was absolutely right – these cookies are not only extremely easy to make but they look and taste like the perfect chocolate chip cookie (vegan and gluten free or not)!

They’re crisp on the outside, soft and gooey on the inside. They remind me of the kind of cookies my older sister and I love and used to make all the time when we were younger. Thin, crisp and gooey is the absolute ultimate cookie! 

Don’t they look amazing? The marshmallows made them even more gooey and chewy. I can only imagine how good they’d be with chocolate chips but I’m sure I’ll be making them again in no time!

Needless to say, I ate all the cookies right away. Next time, I’m making a full batch! Maybe, chocolate and marshmallow? 😉
