I love me some avocados but they’re notoriously expensive in Korea. So, I took the plunge and splurged on a bag of them after going through serious avocado withdrawal recently!

Of course I’m eating them as is, but they ripen quickly and I’m left with the anxiety that comes with a quickly ripening bag of avocados and not being quite sure what to do with them. Enter, avocado mousse! I’ve made a few healthy chocolate puddings over the years but never with avocado. I found two recipes from Chocolate Covered Katie and decided to give one of them a go.

She has a healthier version and a not as healthy version, the latter involving stevia and cocoa powder instead of chocolate chips. I opted for the healthy version which is extremely easy to make (as is the other one) but you don’t have to worry about melting any chocolate. Just throw everything into a food processor and blend. Easy peasy!

The ingredients are so simple too:

  • avocado
  • cocoa powder
  • almond milk
  • stevia
  • vanilla
  • salt

I added the lesser amount of milk for a thicker pudding, 10 drops of liquid stevia, and blended it up for a taste test. It just tasted like bitter pureed avocado, so I made some changes and added an extra .5 times as much vanilla as well as a heaping tablespoon of maple syrup which completely saved it.

After making some adjustments, it tasted like a healthy chocolate mousse that was only slightly bitter. Maybe it was my avocados?

My recipe after the changes (halved because I live alone and can only eat so much mousse):

  • 1 ripe avocado
  • 3 T cacao powder
  • 3 T almond milk
  • 1 T maple syrup
  • 3/4 t vanilla
  • pinch salt
  • 10 drops liquid stevia

You can probably skip the stevia and just add maple syrup which I highly recommend. That or making the chocolate chip version. 

After letting it set up and adding toppings though, it was so much better! I topped mine with some homemade chocolate sauce and banana. 

It was a huge improvement! On it’s own, it still tastes slightly bitter. But the banana and extra chocolate helped to balance it out. Best of all, it’s still refined sugar free and full of healthy fats.
