Growing up I was all about desserts. I loved cupcakes, cookies, dessert bread and homemade chocolates. But one day I started to care more about what I was putting in my body. I wanted to be healthier and fuel my body with foods that made me feel good rather than knock me out.
And that is when I started working on baking with protein powder. I loved the added protein it packed, and how it lowered the baked goods in carbs. If you have dabbled in baking with protein powder you know it can turn out great or it can turn out not so great.
If you cook it too long it turns to rubber. If you cook it not long enough well it will just be like soup. You have to get the baking temperature and the baking time just right to turn your creation into something comparable to the real thing.
One recipe that never fails me are these oatmeal raisin protein cookies. They are made with just 5 ingredients. Refined sugar free, gluten free, paleo friendly and vegan with a vegan protein powder.
I always love that they are customizable. You can trade out the raisins for chocolate chips. Replace the cinnamon with chocolate. The possibilities are endless.
- 1 scoop protein powder
- 1/2 cup oats
- 1 large or 2 small ripe bananas
- 1 t cinnamon
- 1/4 cup raisins
- Preheat oven to 350 F.
- Mash your bananas, then add in protein powder, cinnamon and oats.
- Once mixed completely, fold in your raisins.
- Bake for 15-20 minutes.
