One of my least favorite things about living alone is not being able to bake everything I want. Knowing I am just one person and cake and cookies are loaded with sugar means I can’t just bake a cake on a daily basis. But if you are like me you might have noticed the single serving desserts that are all over the internet.
I created this banana cream pie for two as a sweet treat, and in my opinion the crust was the best part. So if you are like me and you don’t have a family of four to feed, so dessert recipes are not a daily thing, check out this recipe.
1/4 cup walnuts
1/4 cup almonds
1 T almond butter
1/2 T honey
1/2 cup mashed bananas
1/4 serving of sugar free instant vanilla pudding (using a 1.4 oz.)
1/4 to 1/2 cup almond milk
1 can of coconut cream (you won’t use the whole can)
optional 2 T of honey
Place your coconut cream in the fridge overnight. Preheat oven to 350 F. Using your blender or food processor grind up your walnuts and almonds to make a powder. Combine your nuts with the peanut butter and honey then make a crust in a greased ramekin. Bake for 8-10 minutes until the crust is fully cooked (will appear a little puffy). While your crust is baking you can start making your pudding. Place the instant pudding in a small bowl and slowly add your almond milk until you get a pudding consistency. Once you have done this take your 1/2 cup mashed bananas and add that to your pudding mix. Place in fridge. Once your crust has cooled down start by adding a layer of sliced bananas to the bottom. Then layer on your pudding mixture. On top whip up your coconut cream and layer it. Then add a couple slices of banana on top.
Easily make this a dish for 8 by increasing the ingredients by 4!
